My Friend Amy has organized a Fall Festival Recipe Exchange! She has asked for creativity – photos, songs, seasonal traditions, or themed books. Well, we just brought the Autumn/Harvest box up from the basement and haven’t yet put up the decorations; my younger two kids are sapping my energy by changing their minds about their Halloween costumes on a daily basis! Does holiday stress count as “tradition”?
I offer here a favorite recipe for Butternut Squash Soup:
- Ingredients:
- 2 pounds butternut squash, peeled and cut into chunks
- 4 cups chicken or vegetable broth (I’ve used bouillon in a pinch)
- 1/2 cup shredded cheddar cheese
- 2 tablespoons salted butter
- 1/8 teaspoon cayenne (ground red pepper)
- salt and freshly ground pepper to taste
- 1 tablespoon sugar (if needed)
- several chives, cut into 1-inch pieces (optional, for garnish)
Directions:- In a large saucepan, combine squash and broth. Bring to a boil, then reduce head to medium. Simmer until squash is very tender, about 20 minutes.
- Remove from heat and let stand until slightly cooled; puree in batches in blender.
- Return puree to saucepan and place over medium-low heat. Stir in cheddar, butter, and cayenne. Season with salt and pepper.
- Stir until heated through (do not allow to boil). Taste soup, adding sugar if squash was not particularly sweet. If desired serve sprinkled with chives.

Note: Instead of pureeing in batches in the blender, I use that Cuisinart immersion blender I used in this recipe; it purees right in the saucepan.

I love Butternup Squash!
This sounds wonderful! My husband makes a version without cheese (he doesn’t like cheese – see what I have to live with?!) and without the cayenne, but I think he adds all sorts of other things to it. I know he uses heavy cream …

Sounds wonderful. I used to make a similar soup with carrots, but I stopped doing it because cleaning the food processor was too painful. Pathetic reason, I know, because it was terrific soup!

I was waiting for a Butternut Squash recipe to pop up. It isn’t fall without a little Butternut Squash. I know I said this before, but I’ll say it again…I use that immersion blender more than any other gadget in my kitchen. It also has the whisk attachment, and a mini-chopper attachment. I could not live without it!
I absolutely love butternut squash, especially baked with a little bit of olive and cinnamon. I like the soup too, but have never tried making it. So now I have a recipe.

I love a good butternut squash soup. I usually always have soup and veggie chicken nuggets for lunch. I find it to be pretty filling yet decadent at the same time. YUM!

Mmmm…I love butternut squash soup. Sounds good. And the weather is supposed to turn nasty the next few days – perfect for soup. My 15-year old son loves soup and doesn’t understand why we don’t eat it for dinner when it’s hot out! Maybe I’ll make him happy and cook up a big pot this weekend.
And I haven’t even thought about getting the Halloween decorations out yet. Is it really October already? At least your kids have some Halloween ideas – we haven’t come up with anything good yet.
