We’ll welcome in 2012 tomorrow with a dinner of Hoppin’ John, said to be a harbinger of good luck and prosperity in the coming year.
It’s a traditional southern dish consisting of black-eyed peas, rice, onion and bacon/ham. I plan to follow this Hoppin’ John recipe from the Cook’s Country site. This one adds celery, garlic, bay leaves, thyme and scallions to the mix, in a base of chicken broth. It sounds like a hearty and delicious way to welcome in the New Year – good luck and prosperity will be a bonus!
We’ll serve it with a tossed salad and corn bread (the green and gold colors will draw additional wealth
) … but, what to have for dessert?

We’re having apple granola crumble with a non-alcoholic vanilla pear cider afterwards (the non-alcoholic part is coincidental, it has vanilla tones in it. And no kids to ruin

I have a hard time eating plain black-eyed peas but adding all these other ingredients would definitely make them more palatable. Happy New Year!
I will have you know that I was so inspired I made this last night for today..delish!
We made this tonight, and it was quite tasty! I may have over-cooked the rice, though; it was very thick (and mushy), with very little liquid left in the pot. I’ll make it again (next year?), reduce the final cooking time, and perhaps add more chicken stock than the recipe asks for.
